Roasted Chicken with Curry Butter
Overview
This roast chicken combines crisp skin and tender meat with a rich butter seasoned with curry powder, garlic, lemon, and black pepper. Spreading some of the butter beneath the skin helps flavor the breast meat, while the remaining butter forms a fragrant coating as the chicken roasts.
Ingredients
- 1 whole chicken, about 1.8–2 kg
- 4 tablespoons unsalted butter, softened
- 1–2 tablespoons curry powder, according to taste
- 2 garlic cloves, finely minced
- 1 teaspoon finely grated fresh ginger
- 1 teaspoon salt, plus more for seasoning
- ½ teaspoon freshly ground black pepper
- 1 lemon
- 1 onion, cut into wedges
- Fresh cilantro or parsley, for serving
Method
- Prepare the chicken: Heat the oven to 220°C. Remove any giblets, pat the chicken thoroughly dry, and place it in a roasting pan.
- Make the curry butter: Mix the softened butter with the curry powder, garlic, ginger, salt, black pepper, and finely grated zest from half the lemon.
- Season: Carefully loosen the skin over the chicken breasts. Spread part of the curry butter beneath the skin, then rub the remainder over the outside of the chicken. Season the cavity lightly with salt.
- Fill the cavity: Cut the lemon into wedges and place them inside the chicken with a few onion wedges. Scatter the remaining onion around the roasting pan.
- Roast: Roast for 20 minutes, then reduce the oven temperature to 190°C. Continue roasting for about 50–70 minutes, depending on the chicken’s size, until the skin is browned and the thickest part of the thigh reaches 74°C.
- Rest: Transfer the chicken to a board, cover it loosely, and rest for 15 minutes before carving. Spoon the pan juices over the meat and finish with chopped cilantro or parsley.
Serving Suggestions
Serve the chicken with steamed rice, roasted potatoes, flatbread, or a crisp cucumber salad. Roasted carrots, cauliflower, or green beans also pair well with the warm curry flavors.

- Drying the chicken well is essential for crisp skin.
- If the curry butter darkens too quickly, cover the chicken loosely with foil for the remainder of the roasting time.
- For deeper seasoning, apply the curry butter several hours ahead and refrigerate the chicken uncovered. Let it stand at room temperature briefly before roasting.
