Honey Carrots
These honey-glazed carrots are a quick, sweet-and-savory side dish. Gently cooking the carrots before adding the glaze keeps them tender while allowing the honey to form a glossy coating.
Ingredients
- 500 g carrots, peeled and sliced
- 1 tablespoon butter or olive oil
- 2 tablespoons honey
- 60 ml water
- Salt and black pepper, to taste
- 1 teaspoon lemon juice
- Chopped parsley, for serving
Preparation
- Place the carrots and water in a wide pan. Cover and cook over medium heat for 8 to 10 minutes, or until the carrots are almost tender.
- Remove the lid. Add the butter, honey, a pinch of salt, and black pepper.
- Cook uncovered for 3 to 5 minutes, stirring regularly, until the liquid reduces and the carrots are evenly glazed.
- Stir in the lemon juice, taste, and adjust the seasoning.
- Sprinkle with parsley and serve warm.
Tips
- Cut the carrots into similar-sized pieces so they cook evenly.
- Keep the heat moderate after adding the honey, as it can burn quickly.
- For extra flavor, add a small pinch of cinnamon, ground ginger, or thyme.
- Maple syrup may be used in place of honey.
