Honey Carrots

These honey-glazed carrots are a quick, sweet-and-savory side dish. Gently cooking the carrots before adding the glaze keeps them tender while allowing the honey to form a glossy coating.

Ingredients

  • 500 g carrots, peeled and sliced
  • 1 tablespoon butter or olive oil
  • 2 tablespoons honey
  • 60 ml water
  • Salt and black pepper, to taste
  • 1 teaspoon lemon juice
  • Chopped parsley, for serving

Preparation

  1. Place the carrots and water in a wide pan. Cover and cook over medium heat for 8 to 10 minutes, or until the carrots are almost tender.
  2. Remove the lid. Add the butter, honey, a pinch of salt, and black pepper.
  3. Cook uncovered for 3 to 5 minutes, stirring regularly, until the liquid reduces and the carrots are evenly glazed.
  4. Stir in the lemon juice, taste, and adjust the seasoning.
  5. Sprinkle with parsley and serve warm.

Tips

  • Cut the carrots into similar-sized pieces so they cook evenly.
  • Keep the heat moderate after adding the honey, as it can burn quickly.
  • For extra flavor, add a small pinch of cinnamon, ground ginger, or thyme.
  • Maple syrup may be used in place of honey.
